Did you know that watercress is a bona fide anti-cancer vegetable? A member of the cruciferous family—Cruciferae is Latin for “cross-bearing,” named for the fact that the flowers of this family of veggies have four petals that resemble a cross. Watercress also contains significant amounts of iron, calcium, folic acid, vitamins A, C and dietary fiber. The primary cancer-fighting agent is scientifically termed Indole-3-Carbinol (I3C). So eat up and enjoy this season’s bounty in good health!
