FT's Vegetables in Parchment Paper

Yield: 4 servings

1 ½ cup fresh broccoli florets

6 oz. fresh asparagus (cut into 2” pieces)

1 ¼ cup trimmed sugar snap peas

1 Tbsp. extra virgin olive oil

Coarse salt and black pepper to taste


Preheat oven to 400°F. Tear off a 24” long piece of parchment paper (available at the supermarket next to the aluminum foil). Place all ingredients in the center of the parchment paper. Season with salt and pepper and drizzle with olive oil. Fold parchment paper into an envelope shaped packet. Place packet on a baking sheet and cook for approximately 12 minutes until vegetables are just tender cooked.
