Greek Chicken Power Bowl

This Greek bowl is full of goodness. From the delicious marinated grilled chicken to the chopped up fresh veggies, it’s a great weekday option for a warm summer night where being over a hot stove isn’t what you want to do after a long workday. It comes together quickly and can even be consumed cold as leftovers the next day.
Ingredients:
1lb chicken breasts
1 bottle of Greek dressing for marinading chicken
1 cup pearled couscous (cook according to package directions)
½ red bell pepper, chopped
½ red onion, chopped
2 mini cucumbers, chopped
½ cup Greek olives, halved
¼ cup crumbled feta
1 tbsp olive oil
½ lemon
Marinate the chicken breasts for a minimum of 2 hours (full day for maximum flavor) in the Greek dressing. Grill chicken breast until it is no longer pink. While the chicken is grilling, chop up all the veggies and mix together in a large bowl. Cook couscous according to package directions. Once the chicken is cooked, cut into bite-sized pieces.
Now, it’s time to assemble your bowls (approx 2 servings): add half the couscous into a bowl, top with grilled chicken and some of the salad mixture, drizzle with olive oil and a squeeze of lemon, sprinkle on some salt and pepper. Give it a quick mix and it’s ready to eat!
