Can’t seem to get those proportions right for a simple vinaigrette? Here’s a sure-fire French version of this classic, easy (and heart healthy) dressing.

- 1 small clove fresh garlic, minced
- 1/8thteaspoon salt
- 2 tablespoons red-wine vinegar
- ¼ teaspoon Dijon mustard
- Freshly ground black pepper
- 3 tablespoons extra-virgin olive oil
For the dressing: In a bowl, mash garlic and salt together. Add the wine vinegar, mustard and a few turn of the pepper mill. Slowly add in the oil and whisk until dressing is a thick consistency. Chill dressing until serving salad. Place several cups of washed and spun greens (I like romaine) into a large glass bowl. Add the dressing and toss until the greens are lightly coated and serve.
