Aaron's Lemon Chicken Bowls

A simple and quick, vibrant meal that is easily prepared for a busy week. This recipe yields six servings in just 30 minutes!
Ingredients (per 6 servings):
2 tbsp olive oil/butter
2 cups of broccoli florets
Himalayan pink salt and ground pepper
2lbs boneless skinless chicken breast
6 cups of cooked jasmine rice
Toasted sesame seeds and a lemon wedge for looks
Lemon sauce Ingredients:
¼ cup chicken broth or water
¼ cup of honey
¼ cup lemon juice
1 tbsp soy sauce
1 tbsp toasted sesame oil
1 tbsp corn starch
1 pinch of ground ginger
2 cloves of minced garlic
Directions:
Cook jasmine rice as written on package. Heat 1 tbsp oil or butter in large pan over medium to high heat. Add broccoli or a vegetable of preference, season with salt and pepper. Saute for 5 minutes while stirring occasionally. Transfer vegetables to a plate and return to heat.
Add another 1 tbsp of oil to the pan along with the chicken. Season with salt and pepper.
Saute for 6 minutes tossing the chicken occasionally. Stir in lemon sauce, coating the chicken evenly until the sauce simmers and thickens.
Separate the rice, chicken and vegetables into 6 meal prep containers!
This meal can be served immediately or covered and refrigerated for up to 5 days. It also goes great with whatever vegetables you have lying around the kitchen.
