Squashed Chicken

Ingredients:

  • 1 large spaghetti squash
  • 3 chicken breasts, cooked and diced
  • 1 bunch of asparagus blanched, cut in 1 inch pieces
  • 2 cups sliced mushrooms
  • 1 cup artichokes
  • 1/2 cup white cooking wine
  • 3 tablespoons grape seed oil
  • 1/4 cup chicken stock
  • 4 cloves of garlic
  • Crush red peppers
  • Salt and pepper

Directions:

Prepare spaghetti squash by cutting in half. Scrape with spoon to remove seeds. Place both sides face down on cooking sheet, bake for 45 minutes at 375 degrees. Scrape with fork to remove strands then set aside.

Sauté mushrooms and garlic in grape seed oil till mushrooms browned. Add in artichokes and asparagus with some crush red peppers. Cook for 1 minute. Add cooked chicken, white wine, chicken stock, and some more crush red peppers if you like. Cook on medium high for 2 minutes. Add spaghetti squash, mix all ingredients well. Serve and enjoy.
