Super "Non-Bowl"/Basin Super Meal: Buffalo Chicken Tacos

Buffalo Chicken Tacos
Ingredients

1 cup of thinly sliced celery
-
2 thinly sliced baby peppers
-
3 plum tomatoes (chopped)
-
1 medium onion (diced)
-
3 tbsp lemon juice
-
½ tsp salt
-
½ tsp pepper
-
2 tbsp fresh cilantro
-
2 tbsp unsalted butter (melted)
-
2 tbsp unsalted ketchup
-
2 tsps hot sauce
-
1 tbsp extra-virgin olive oil
-
1 lb of chicken breasts
-
¼ c. Greek yogurt (sour cream sub.)
-
Whole wheat tortillas or cabbage to use as tortillas
-
Chopped Lettuce (optional)
-
Avocado (optional)
-
Jalapenos (optional)
-
Shredded Cheese (optional)
Step 1: Combine celery, peppers, tomatoes, onion, and lemon juice in a bowl. Stir in half of your salt and pepper. Toss with cilantro.
Step 2: In a separate bowl, stir together butter, ketchup, and hot sauce.
Step 3: Heat oil in a skillet over medium-high heat. Add chicken and cook until lightly browned on all sides. Sprinkle with remaining salt and pepper. Cut chicken into small chunks.
Step 4: Add chicken to hot sauce mixture and toss until coated.
Step 5: Stir together Greek yogurt and blue cheese. Assemble tacos with chosen toppings.
