Summertime Splash Salad

Ingredients:

  • Green of Choice (Arugula, Spinach, Lettuce)

  • Shrimp

  • Avocado

  • Mango

  • 2tbs Lime Juice

  • 1/2 cup Olive Oil

  • ½ tbs Maple Syrup

  • 1 tbs Dijon Mustard

  • 1 tsp Salt

Directions:

  1. Follow directions on bag for cooking shrimp or use pre-cooked shrimp. Place in bowl.

  2. Chop your mango and avocado into cubes and mix into the shrimp bowl.

  3. In a separate, small bowl, prepare your vinaigrette by mixing together lime juice, olive oil, maple syrup, Dijon mustard, and salt.

  4. Mix together vinaigrette with shrimp mixture. Add vinaigrette slowly until everything is coated nicely, set aside rest for extra topping for salads if desired.

  5. Place arugula in serving bowls, top with shrimp mixture and serve.
