Lamb Meatballs, spiced tomato sauce, mint and feta
3/4 cup finely diced onion
1/4 cup heavy cream
2 egg yolks
1/2 teaspoon ground cinnamon
1 teaspoon ground cumin
pinch cayenne pepper
2 pounds ground lamb
1 cup panko breadcrumbs
1/4 c chopped parsley
1/4 c olive oil
2.5 cups tomato sauce, spiced
1/4 pound feta cheese
2 tablespoons sliced mint leaves
salt and black pepper
Mix the onion, cream, egg yolks, cinnamon, cumin, and cayenne in a large bowl. Place the lamb in a bowl and season with 2 1/2 teaspoons of salt and some fresh ground pepper, mix well. Add the breadcrumbs and parsley, and mix by hand . Shape into 1.5 ounce balls
Heat a large saute pan over high heat for 2 minutes. Add oil and swirl around pan. Carefully place the meatballs in the pan and cook for a few minutes until golden browned. Turn the meatballs over, and continue cooking all on all sides. Add the spiced tomato sauce, and bake the meatballs in a preheated 400F oven for 15 to 20 minutes until the sauce is bubbling and the meatballs are cooked through.
Top each meatballs with feta and mint. Serve
