Shrimp Scampi Zoodles

As most of my clients know, we recently picked up a spiralizer and we absolutely love it! Mindy has created various things with it but this one is very good so if you don't have a spiralizer I highly suggest you get one!
- Shrimp (1 pound)
- 4 Garlic Cloves
- 1 TBSP Parsley
- 2 Zucchinis (Cut into zoodles)
- 2 TSP Olive Oil
- Black Pepper (to taste)
- Salt (to taste)
- Red Pepper Flakes
In a large pan heat 1 tsp olive oil over medium heat. Add garlic and saute for 1 minute. Add shrimp, salt and pepper (to taste) and saute for another minute. Then set aside.
Add remaining oil and garlic to pan, heat for 30 seconds then add zoodles, salt and pepper (again to taste). Cook for 2 minutes, stirring. If you like your zoodles soft, cover and cook for an additional 2 minutes.
On low heat, add shrimp, parsley and red pepper flakes. Toss well to combine and serve immediately.
Trainer Notes: Red pepper is not needed, however, eating spicy food raises your body temperature causing your body to burn calories to lower your core temperature so feel free to add anything spicy to any meal and as much as you want :)
