Key West Chicken

1 package chicken breast strips (about 6-8 strips)

2 avocados

1 bag Uncle Brown’s Brown n Wild rice

8 oz Fresh Pineapple, cut into chunks (can use canned pineapple)

Mango sauce/Marinade

3 oz Sargento Reduced Fat Shredded Mozzarella Cheese

Feeds roughly 2-3 people

  • Thaw Thin Chicken Breast Strips
  • Cut Into Cubes
  • Heat Pan On Stove To Medium High
  • Spray Pan With Cooking Spray And Put Chicken Cubes In Pan
  • When Chicken Is About Half Cooked, Add 1 bag of Uncle Brown’s Brown And Wild Rice
  • While This Is Cooking, Start Hollowing Out Avocados Into Separate Bowl
  • When Finished With Avocado, Put In Mango Sauce or Mango marinade sauce To Almost Finished Chicken/Rice
  • When Chicken Is Finished, Place On Plate, Add Chunks Of Pineapple
  • Add Avocado On top, If Desired Add A Small Layer Of Shredded Cheese.

Couple Of Things I would change is instead of using 2 avocados, use only 1. And Mango Sauce Can Be High In Sugar, I was Able To Find A Brand Called 3 Zeros Mango Sauce That Will Help Lower The Sugars:
