This may all sound like a lot but it really only takes about 15 mins to prepare and then the cook time and the outcome is very satisfying so just do it, okay?!
Marinate salmon in your favorite marinade ( I use Soy Vay Marinade and Sauce, Veri Veri Teriyaki) for 30 mins in fridge then let sit out for 10 mins before baking for ~ 17 minutes at 425 and then broiling for 3 mins to get that wonderful slight crusting on top!
Wash and dry kale and be sure to remove any thick stems. Lay on baking sheet, massage with olive oil so that it is evenly distributed then sprinkle with salt and pepper ( I use garlic and onion salt sometimes - it s a bit tastier). Bake on bottom of stove and under the salmon for about 10-15 mins. Watch for burning. You do want slight browning but too much will ruin. Making sure the kale is dry before baking will ensure a crunchy delight:) My 2 year old son thinks hes eating "chips"!
Cut into florets, wash and dry. Lay on baking sheet or in glass bake ware. Massage with olive oil so its evenly distributed then sprinkle with Cumin, Paprika and Salt. Bake it for ~ 30 mins at 425. The oil and spices make an awesome and tasty carmelized seasoning. This will go in oven first, before salmon.
Forzen Jasmine Rice
Trader Joes has a fabulous already cooked frozen Jasmine rice, as well as a brown and a barley mixture. It has become a staple in my house. I try not eat it all the time or just have a small portion as seen in the picture (unless i had a killer workout that day) but my husband and 2 year old son love it! You cut a slit in the bag and pop it in the microwave for 3 mins. It doesn't get easier than that AND there are not all of those additives like there are in "brand name" microwavable bags of rice.
