So I was speaking with a client today about how quick our bananas had ripened due to the hot weather we had the last few days. She went on to tell me about a great idea for the summer time sweet tooth. So here is what Katie D's summer time favorite-or anytime for that matter.
Here is what you need:
fruit (stawberries, blueberries, etc..)
cocomilk milk (for thickness if you are not using a banana)
peanut butter/almond butter
So with this recipe it is super easy and far healthier than ice cream. So here is what you do:
1. take the banana(s) out of the skin and other fruit if you desire and throw them into a food processor/blender.
2. Add a dash of vanilla extract--here is where you could add peanut/almond butter, cinnamon or whatever you would like! Blend/process the ingredients until it is a nice smooth texture. If you are using other fruit other than the banana you might want to use the coconut milk to make a texture similar to frozen yogurt. I also have put raw oats in as well to thicken the texture.
3. Put it in the freezer for a night or until it is frozen.
4. Then take it out and enjoy!!! Definitely great for fruit that is a little on the ripe side as well.
