Quinoa Pilaf with Raisins and Peas

Here is a way to sweeten your quinoa....This is good for 6 servings:
-1 cup quinoa
-2 tablespoons olive oil
-1 cup thinly sliced yellow onion
-1 teaspoon ground cumin
-1/4 teaspoon cinnamon
-1/4 teaspoon ground cardamom
-1/2 cup sliced almonds
-2 1/2 cups water
-1/4 cup dark raisins
-1 teaspoons salt-free seasoning blend
-1/4 teaspoon freshly ground black pepper
-1 1/2 cups frozen green peas
Rinse quinoa in a sieve(strainer) with cool running water. Let drain and set aside. In a skillet with a lid, heat oil over medium heat. Add the onion and cook stirring occasionally until golden brown. Add the ground cumin, cinnamon, cardamom, and almonds. Stir to combine with the onions for about 30 seconds, using caution not to burn the spices. Add the rinsed adn drained quinoa and cook stirring for about 1 minute to toast the quinoa, again using caution not to burn the spices. Add the water, raisins, salt-free seasoning, and pepper. Bring to a boil. Cover and reduce heat to low. Cook for 15 minutes. Add the peas on top of the quinoa without stirring. Cover and cook for 5 more minutes. Remove from the heat and leave covered for 10 more minutes. Fluff with a fork before serving.
