Grilled Pineapple and Peanut Butter Sandwhich

So here is what you need for a simple delicious treat:

2 slices pineapple

2 tsp of peanut or almond butter

1 slice whole-wheat toast(try for multi-grain and/or sprouted grain)

Optional: Mix in whey protein powder with the peanut butter

So here comes the tricky part:

1. Turn on the grille

2. Place pineapple slices on the grille. It won't take long to warm the pineapple up so make sure you don't burn them. Flip once you have a nice grille mark on the underside.

3. While the pineapple is grilling take your peanut butter of choice (I prefer the self-crushed PB from whole foods-about $3.69/lb, or teddy's pb is a good brand...try hard to stay away from peanut butter that contains hydrogenated oils, corn syrup, ect..) and smear it over the bread. I also am a fan of toasting the bread as well.

4. Once the pineapple is grilled to your liking take it off and put it on the slice of bread with peanut butter and enjoy!
