Grean Pea and Lima Bean Soup

Here is a suprisely easy recipe with ingredients that are not too hard to find. Here is what you need:

-1/4 cup extra virgin olive oil

-1 large sweet onion, peeled and chopped

-one 1-pound bag of frozen peas

-one 1-pound bag of baby lima beans

-1 teaspoon freshly ground black pepper

-8 cups reduced-sodium chicken broth or water

-extra virgin olive oil for garnish

Here is how to prepare it:

In a soup pot, heat the olive over medium heat. Add onion and cook until golden brown, about 10-12 minutes. Stir in peas and lima beans. Season with salt and pepper. Cook, stirring occasionally, for 10 minutes. Stir in the water, bring to a boil and reduce to a simmer. Cook until the beans and peas are soft, about 20 minutes. With a blender or food processor, puree the soup until smooth or velvety. Season with salt and pepper. Serve each bowl drizzled with olive oil. (personally I enjoy throwing some cayenne pepper in too. I find that by making my food spicy it makes me eat slower-mainly because my mouth is on fire. I started doing this so that I wouldn't eat my food as fast. So I would eat less because my stomache was able to tell my brain-YOUR FULL STOP EATING!!! Otherwise I would shovel it down fast and before I would feel full I would overeat-Brian)
