Summer Power Breakfast Ideas

Since summer brings along fresh fruits and vegetables, this list is full of vibrant and colorful dishes that will make your mornings just a little more sunny. All packed with vitamins and antioxidants your body needs for an energetic morning!

  1. Peanut Butter Banana Smoothie

This creamy and tasty smoothie is creamy, rich in protein and filling for Breakfast. It takes less than 5 minutes to prepare.

1 serving, about 16 ounces without ice:

3/4 cup unsweetened almond milk

1 large banana cut into chunks and frozen

2 tablespoons creamy peanut butter

1/2 cup nonfat plain Greek yogurt

1/4 teaspoon ground cinnamon

Ice optional

Optional mix-ins: ½ scoop protein powder (vanilla or chocolate) 1 tablespoon flaxseed meal, 1 tablespoon chia seeds

  1. Fruit and oatmeal breakfast bowl

Oatmeal is always a great option to start your day, but this recipe is extra nutritious! You can make it with berries or more tropical by adding mango, coconut and bananas.

It takes 5 minutes to prepare. 2 servings ingredients:

1 cup rolled oats

1 ½ cup of almond milk or favorite milk

¼ cup Greek vanilla yogurt or coconut yogurt for vegan option

1 tablespoon of chia seeds

Splash of maple syrup or honey

Top with any fruit or nuts

For Overnight Option- (cold cereal)

In a glass mason jar, or container of your choice, add oats, chia seeds, almond milk, Greek yogurt and splash or maple syrup or honey.

Cover and refrigerate overnight ( at least 8 hours).In the morning, stir the oats and top with fresh berries, nuts and seeds, and fresh mint (optional)

  1. Acai Bowl

Acai bowls are excellent summer breakfast, perfect to beat the heat !

About 2 servings per Package:

Frozen acai puree –A good brand is Sambazon, it comes in small packages.

1 Frozen banana – use ripe bananas for a sweeter acai bowl. Not under ripe green or mushy overripe brown.

¼ cup Fruit juice (such as apple or grape) – Use fruit juice since it’s sweeter but coconut water or almond milk can be used as well.

Toppings – on a standard acai bowl you’ll tend to find blueberries, strawberries, bananas, granola and honey. Add more like coconut or other fruit to your hearts content.

Add bananas to processor, cover with lid, and hold processor down (it will want to jump!), then pulse in bursts to break into tiny bits.

Add blueberries, pulse in bursts to break into bits. Add acai and juice and pulse to a smooth puree.

Pour mixture into chilled bowls. Top with granola, fruit and drizzle with honey if desired.
