Pumpkin Pie Breakfast Bowl

This Pumpkin Pie Breakfast Bowl is almost as good as the dessert but is packed with protein, healthy fats and more awesome nutrients. It is quick to whip up and you can make just one serving or several for the week. It is both adult and baby friendly and has minimal ingredients; you can also add toppings of your choosing.

Below is a sample of how I make mine:

Ingredients:

1 cup vanilla Greek yogurt (Tip: if you don’t love Greek yogurt, cottage cheese is another great option for this recipe and still packs some protein)

½ cup pumpkin puree (canned pumpkin only, not pumpkin pie filling)

1 tablespoon maple syrup

1 teaspoon pumpkin pie spice

Walnuts

Hemp Seeds

Mix the Greek yogurt, pumpkin puree, maple syrup and pumpkin pie spice into a bowl. Top with walnuts and hemp seeds. That’s it!

Enjoy this as a quick breakfast or as a snack.

Your topping options are up to you; other great toppings are granola, crushed graham crackers or even some dark chocolate chips when having it as a snack. If you’re a total pumpkin head this time of year, add this recipe to your mix.
