Healthy Turkey Bean Burrito Recipe

Turkey Bean Burrito

1 lb lean ground turkey
1 small onion, coursely chopped
1/2 red bell pepper
1/2 green bell pepper, chopped
1 15 oz can black breans, rinsed
1 tsp chili powder
juice of 1 lemon
1 tbsp oat bran
Sea salt, to taste
4 whole-grain tortillas (7")
1 cup shredded low-fat Monterey Jaack cheese
1 medium tomato, coarsely chopped
1 cup romaine lettuce, shredded
Salsa, to taste

1. In a nonstick skillet, saute' turkey until no longer pink. Add onion and red and green peppers and saute' until soft. Add beans, chili, lemon juice, oat bran and salt: heat through, stirring constantly until mixture thickens.

2. Place 1/2 cup of cooked turkey mixture on the center of each tortilla. Sprinkle with cheese, tomato, lettuce and salsa. Serve hot.
