Butter...Enough Said!

Just in case you haven't seen Time Magazine's recent cover, I wanted to sort of "recap" the article that puts my opinion on nutrition into the mainstream and debunks a lot of what we've been conditioned to think about food for decades now.

Butter. Yup, butter. Other than bacon, I can't really think of anything that sounds more appealing when it comes to feeding myself. I don't think I'm alone in this. Then again, I'm sure my Southern heritage plays a huge role in that!

It's not just butter this article is discussing. It's fat in general, saturated fat like that found in animal products like butter, to be more specific. You see, a few decades back science and the medical community deemed saturated fat to be the enemy when it comes to getting fat and developing diseases like heart disease and diabetes. Since the 1980's we've been on a mission as a country to wipe out butter, eggs, fatty meats...all in an effort to get thinner, healthier, and happier.

But what happened? Look around you. One in three Americans is obese. Heart disease is the number one killer of people in this country. Type 2 diabetes has increased 166% between the years of 1980 and 2012. But we're eating less saturated fat...what's the deal?

Aha moment! Much like I've been discussing via the blog, in person, and any soapbox moment I find myself in, new research shows that it's the overconsumption of carbohydrates, sugar and overly processed foods that is leading to the downfall in our health. Eating these foods changes our bodies' chemistry such that it becomes more accustomed to storing calories as fat instead of burning them off as fuel.

I won't go into detail since the article in Time Magazine is still current. I simply wanted to take the opportunity to shout at the top of my lungs that maybe the media and science are starting to "get it right!" We've got to educate ourselves to take care of ourselves and not succomb to that "old" research.
