Grilled Chicken Street Corn Bowls

Fresh, high-protein, and packed with summer flavor — these Grilled Chicken Street Corn Bowls are the perfect way to kick off June. Easy enough for weeknight meal prep but flavorful enough to feel like a summer cookout, this recipe brings together lean protein, fiber-rich carbs, and healthy fats into one seriously satisfying meal.

Ingredients (4 servings)

  • 1.5 lbs grilled chicken breast, sliced
  • 2 cups cooked jasmine rice
  • 2 ears corn, grilled and cut off the cob
  • 1 avocado, diced
  • 1 cup cherry tomatoes, halved
  • ¼ cup red onion, diced
  • ¼ cup crumbled cotija cheese
  • ¼ cup plain Greek yogurt
  • Juice of 1 lime
  • Chili powder, garlic powder, salt & pepper
  • Fresh cilantro for garnish

Instructions

  1. Grill or pan-cook chicken breast with chili powder, garlic powder, salt, and pepper.
  2. Grill corn until lightly charred and remove kernels from cob.
  3. In a small bowl, mix Greek yogurt with lime juice and a pinch of chili powder.
  4. Build bowls with rice, chicken, corn, tomatoes, avocado, and onion.
  5. Top with cotija cheese, cilantro, and lime yogurt drizzle.
