Savannah's Chicken Lettuce Wraps

Makes a great lunch option and can be easily packed up to bring to work.

Ingredients:


Sauce
3 tbsp hoisin sauce
3 tbsp Thai sweet chili sauce
3 tbsp low sodium soy sauce
2 tbsp sriracha (more or less to taste)
1 tsp sesame oil
2 tbsp olive/avocado or vegetable oil
1 tbsp minced ginger
4 gloves garlic, minced

Filling
1 lb ground chicken
3 tbsp olive oil
8 scallions, thinly sliced whites and greens separated
2 gloves garlic
1 tsp minced ginger
1/2 white mushrooms, chopped
1 medium red pepper, chopped
1/2 cup water chestnuts, chopped

2 heads butter or romaine lettuce

Directions:

Sauté peppers, scallion whites, mushrooms and water chestnuts for 1 minute.
Add minced garlic and ginger, sauté til fragrant.
Add in chicken, cook until temp reaches 165 F.
Pour the sauce mixture into the pan, cook and mix for 1 to 2 minutes. Sauce should be thick.
Scoop into lettuce leaves, sprinkle on the green scallions and serve.
Alternative - can also be served over rice!
