Roasted Tomatoes With Garlic

Ingredients:

Yield: 8 servings (serving size: 1/8th of recipe, 135 grams or ~ ½ cup tomatoes)

· 2 pounds of plum tomatoes (preferably organically grown)

· 4 garlic cloves, cut lengthwise into slivers

· 1 teaspoon salt

· ½ teaspoon freshly ground black pepper

· 2 tablespoons extra virgin extra virgin olive oil

· Drizzle of balsamic reduction glaze (I use a commercially prepared brand)

· ½ cup chopped fresh basil, for garnish

Directions:

Put oven rack in center position and preheat oven to 450°F. Cut tomatoes in half crosswise. Arrange tomatoes with cut side up in a lightly oiled shallow baking pan. Stud the tomato halves with slivers of garlic, then sprinkle with salt and pepper. Drizzle tomatoes evenly with olive oil and balsamic reduction glaze. Roast until soft and wilted, about 20 minutes. Remove from oven and serve warm. Garnish with fresh basil.
