Mongolian Beef Ramen

A quick weekday meal packed with protein and veggies all stir-fried into one dish. Reheats well so is a great meal prep option for those days you don’t have time to cook!

Ingredients:
-1 lb top sirloin, sliced into really thin pieces (tip: some grocery stores sell stir-fry beef so it’s already cut for you)
-1 big head of brocolli, chopped into florets (fresh is best for this recipe)
-2 large carrots, cut into matchstick size pieces
-1 bunch of scallions
-1 tsp minced ginger
-3 gloves garlic, minced
-Ramen noodles or rice noodles (or any kind of noodle will work!)
-1.5 c low sodium beef or vegetable broth, you can even just do water
-1/2 c soy sauce or coconut aminos
-1/4 brown sugar
-1 tsp sesame seeds (optional)

-Pinch of red pepper flakes
-1 tbs corn starch
-Olive or avocado oil for cooking

Directions:

1. Toss the sliced beef strips in the cornstarch to coat, cook in an oiled pan for 2 - 3 minutes per side and then transfer to a dish on the side.
2. Add in your sesame oil, garlic and ginger and saute until fragrant. Add a pinch of red pepper flakes for a little spice. Add in soy sauce, beef broth and sugar, bring to a low boil.
3. Add in your carrots and broccoli, cover and simmer on low for 5 minutes (broccoli should be fork tender).
4. Add your ramen to the boiling water and cook according to directions while the rest of your meal finishes cooking.
5. When broccoli is cooked to your liking add the beef back into the pan along with your cooked noodles. Toss it all together.
6. Scoop into dishes and top with green onions and sesame seeds (optional).
