Lyzz's Burrito Bowl

With Cinco de Mayo coming up, here’s a healthier burrito bowl recipe you can easily whip up. I usually start with a pound of ground beef and a can of refried beans (I like Amy’s refried black beans), then eyeball everything else when I build my burrito.
Burrito Bowl
- 1 lb ground beef (or your preferred protein source)
- 1 can Amy’s refried black beans
- Taco sauce
- Cotija cheese
- Strands of lettuce
- Avocado slices
- Sour cream
- Lime juice
- Taco seasoning (you can make your own)
- Optional: cooked white rice
- Optional: corn
Salsa
- Tomatoes
- Red onion
- Jalapeño
- Cilantro
- Lime
- Cumin
For the beef mixture:
1. Brown the beef in a skillet. Once it is browned, drain the fat. Crumble the beef then add the taco sauce and taco seasoning.
2. Add the can of refried beans into the beef mixture and mix until evenly combined. Set aside.
Now make the salsa:
Finely dice the tomatoes, red onion, jalapeño, and cilantro. Mix it all together. Add the juice of a lime to the mixture, then add the cumin. You can make this an hour ahead so the flavors combine.
Build your burrito:
1. If you have rice, that goes in the bottom of your bowl.
2. Next, pack on as much lettuce as you like.
3. Add the beef mixture, some more taco sauce if you want, the corn if you want to include that, then the salsa.
4. Top it with crumbled cotija cheese, avocado slices, chopped cilantro, and a dollop of sour cream.
5. Squeeze lime over it for more flavor.
6. Enjoy!
