Fresh Spring Green Salad with Herbs

Ingredients:

  • Mixed Spring Greens: 4 cups (a blend of arugula, spinach, and baby lettuce works well)
  • Fresh Herbs: 1/2 cup (choose a mix of parsley, dill, and basil for a vibrant flavor)
  • Cucumber: 1 medium, thinly sliced
  • Radishes: 4-5, thinly sliced
  • Green Onions: 2, chopped
  • Avocado: 1, sliced
  • Cherry Tomatoes: 1 cup, halved (or substitute whole tomato wedges)
  • Edible Flowers (optional): a handful, for garnish

For the Dressing:

  • Olive Oil: 1/4 cup
  • Lemon Juice: From 1 lemon
  • Honey: 1 tablespoon (or use maple syrup for a vegan option)
  • Garlic: 1 clove, minced
  • Salt and Pepper: To taste

Instructions:

  1. Prepare the Salad Base:

    • In a large salad bowl, combine the mixed spring greens and fresh herbs. Toss gently to mix.
  2. Add the Vegetables:

    • Top the greens with the sliced cucumber, radishes, green onions, avocado slices, and cherry tomatoes.
  3. Make the Dressing:

    • In a small bowl or jar, whisk together the olive oil, lemon juice, honey, minced garlic, and a pinch of salt and pepper until well combined. Taste and adjust seasoning if necessary.
  4. Dress the Salad:

    • Just before serving, drizzle the dressing over the salad and toss gently to ensure everything is evenly coated.
  5. Garnish and Serve:

    • Garnish with edible flowers for a touch of elegance, if used. Serve immediately for the freshest taste.
