Breakfast On The Go

Life is busy, and we’re always on the go. Mornings can be very hectic for many, between getting kids ready for school and yourself out the door for work. It’s easy to skip breakfast and just live off coffee until lunch… but let’s be honest, that’s not exactly a healthy habit. Wasn’t our goal to live a healthier, more balanced life? Cooking each morning likely isn’t feasible, so here are a few make-ahead options to streamline your morning. These can be consumed on the go or while you get ready for the day.
Overnight Oats: How you make this is really up to you as far as toppings go and a quick Internet search will pull up hundreds of overnight oats variations, but below is a basic recipe.
Base - 1 cup rolled oats, ½ cup Greek yogurt, ¾ cup milk
Toppings - Nut butter of choice, top with fruit.
Make-ahead Breakfast Burrito: can be heated in the microwave or toaster oven and eaten while on the move. Makes 5 burritos.
Ingredients - 1 cup onion (chopped)
1 cup green pepper (chopped)
½ cup black beans
½ cup turkey bacon (cooked and chopped)
½ cup shredded cheddar cheese
1 cup egg whites + 5 whole eggs
5 flour tortillas (burrito size)
Directions - Start by sautéing the veggies, add in black beans and the turkey bacon. Pour egg whites and eggs into the pan, mixing veggies throughout. Scramble eggs until cooked through. Distribute mixture evenly to the 5 tortillas and top with cheese. Roll or fold into a burrito, heat in a frying pan, seam side down, and repeat until all tortillas are done. (Tip: heat tortillas in the microwave for 30 seconds prior, making them easier to roll.) Can be stored in the fridge and pulled out throughout the week for a quick take-with-you breakfast.
