Billy's Baked Salmon on Greens with Raspberry Vinaigrette

Description: This recipe provides an abundance of omega-3 fatty acids, phyto- and micronutrients essential for proper metabolic functioning & immune support, and protein for muscles while avoiding too many simple carbs. A great meal for those looking to lean out; if you’re looking to gain muscle size this should be part of a larger course, for more calories and bulk.

Ingredients:
- Wild-caught Salmon Fillet(s)
- Basil
- Thyme
- Richly-colored Mixed Greens
- Raspberry Vinaigrette
Instructions:
- Preheat oven to 400oF. Place the salmon fillet(s) on a baking sheet or dish lined with parchment paper and season with basil & thyme.
- Bake for 12 minutes.
- Place fillet on the bed of greens and drizzle raspberry vinaigrette on the visible greens.
Portioning Guidelines (may adjust with input from trainer, dietitian, or doctor):
- Females: 1 palm-sized portion of salmon fillet; 1 fist-sized bunch of greens
- Males: 2 palm-sized portions of salmon fillet; 2 fist-sized bunches of greens
Nutrition:
- Wild-caught salmon contains less fat and more micronutrients (iron, calcium, zinc) than farm-raised salmon. This is because the environment that farm-raised salmon live in gets polluted easier and the feed they are given is highly-processed and of less nutritional value than what salmon eat in the wild. The inbreeding which occurs amongst farm-raised fish is also a concern with regards to fish health and nutritional composition.
- I prefer lining baking sheets/dishes with parchment paper rather than the more traditional aluminum foil because we are discovering links between aluminum and neurodegenerative disorders like Alzheimer’s and dementia.
- Basil and thyme both contain numerous micro- and phytonutrients and what one lacks the other holds in abundance, making them a great pairing not just for taste but also for nutritional wholeness.
- The greens can be mixed yourself (various lettuces, arugula, kale, etc.) or bought pre-mixed from the grocery store. The deeper and richer the colors the better as they indicate greater nutritional depth than the paler, more bland-looking, varieties.
- I prefer Marie’s raspberry vinaigrette as it has a smoother consistency and gives a little sweeter taste than some of the other brands. The sweetness helps to counterbalance the heavier texture of the herbed salmon. For those strictly watching their sugar intake drizzling just the visible portions of the greens after placing the salmon on top helps to control the amount used.
