Healthy Recipe: Apple Stuffed Pork Roast

Ingredients:

-Pork Roast (or loin)

-1 Granny Smith Apple (the green ones) sliced thin

-3 Cups of cut carrots or baby carrots

-1 large onion

-3 cloves garlic

-1 Cup Applesauce

-Salt/Pepper

 

Recipe:

Start by slicing the apple very thinly.  Now take the pork roast and make slits into the top spacing about 1/4 inch between each.  Also, make sure to get the cut about halfway into the thickness of the roast.  Stuff the thin apple slices into the premade slits in the roast.  Set that aside briefly.  Next lets dice up the onion, carrots, and garlic and place that into a dutch oven or ceramic baking dish.  Place the stuffed pork roast on-top of the veggies.  Cover with the applesauce, and add salt and pepper.  I cooked this on the burner at medium heat for 55 minutes.  You could also cook in the oven for about 1 hour at 375 degrees.  Pretty simple, a little prep goes a long way-this one is personal trainer approved!
