Breakfast doesn't have to be time consuming or difficult to make. Here a couple simple and easy, yet healthy recipes to try!
1. Avocado Toast with Egg
2 slices of whole grain bread, lightly toasted, topped with smashed avocado and a sprinkle of salt and pepper. Top with two sunny side up eggs and you're all set!
2. Peanut butter and banana smoothie
Smoothies are a great way to pack a lot of nutrients into a meal. Blend one frozen banana, 2 tablespoons of peanut butter, 1 cup of almond milk, and a few ice cubes. Add a scoop of your favorite protein powder for an extra protein boost!
3. Fruit and yogurt parfait
Simple and quick! Take your favorite brand of greek yogurt and simply add your favorite fruit! Add some nuts for extra satiety!
4. Quinoa bites
In a medium bowl. combine 2 cups cooked quinoa, 2 eggs, 1 cup of your favorite veggies (spinach and zucchini work well), 1 cup of cheese and a sprinkle of salt and pepper. Portion into a lightly-greased mini muffin tin, and bake at 350 for 15-20 minutes. Easy to bring along with you and delicious warm or cold!
5. Leftovers and eggs
Place a scoop of leftover roasted veggies, potatoes, or meat in a container, top with a cracked egg, and heat in the microwave until the egg is cooked through, 30-45 seconds. Add hot sauce if you're feeling spicy!
