Healthy Breakfast Idea: Lighter French Toast

Lighter French Toast is my go-to breakfast when I still want to get in a good amount of protein, but I am looking for something sweet and warm on a cold morning. This recipe has around 300 calories and about 17.5 grams of protein which will keep you full throughout the morning. This recipe also pairs nicely with some sort of fruit like strawberries, blueberries, or banana. It is also super quick to make, taking no more than 10 minutes to prepare, so you can make it on weekends or during the work week.

Ingredients:

  • 3 Slices of Reduced-Calorie White Bread
  • 2 Eggs
  • 1 TBSP Half and Half
  • 1 tsp Vanilla Extract
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ cup sugar free syrup

Directions:

  1. Start heating pan, spray with cooking spray. Combine eggs, half-and-half, vanilla, cinnamon, and nutmeg in a bowl and whisk until well combined.
  2. Dip bread into egg mixture until both sides of bread are coated with the egg mixture and then place on the warmed pan.
  3. Wait for one side to cook, until the egg is set and starting to brown, before flipping. Then let the other side cook thoroughly until French Toast is done.
  4. Top with syrup and enjoy :)

There are a lot of ways to make this recipe your own including using wheat bread, adding fruit to the top, topping with butter instead of syrup, adding more or less spice, adding some sort of nut butter. Feel free to experiment with toppings and spices to see which version works best for you and your lifestyle.
