Instead of Green Beer, Try Some Green Food

Try celebrating St. Patrick's Day a little different this year. There are many nutritional benefits from green vegetables. Green vegetables often have vitamin B, C, and K. It can help boost your immune system and can reduce your risk for various chronic disease such as high blood pressure. Our Cardio Club members this month have benefiting from their awesome green vegetable foods!
Check out some of these other common green food recipes which include, peas, kale, and spinach. Try them out and see if you find something you like!
Shamrock Soup
2 Cups Chicken Broth
6 Scallions Sliced
4 Cloves Garlic (crushed)
Salt/Pepper
1 Pound Peas
8 Cups Fresh Chopped Spinach
1/3 Cup Light Cream
Plain Yogurt (Optional)
Add everything except Kale
Boil mixture until peas and scallions are soft
Add 8 Cups of Spinach and boil until soft.
Green Gnocchi
1/3 Cup Basil Pesto
2 Cups Baby Spinach
1 Pound Potato Gnocchi
2 Cups Snap Peas
1/3 Cup Shredded Mozzarella Cheese
Black Pepper
Boil gnocchi, add peas into boiling water during final minute of cooking
Toss gnocchi and peas into bowl and toss spinach in to wilt
Sprinkle a little cheese and season with pepper
Minty Peas
2 Cups Peas Frozen
2 Teaspoons of Olive Oil (Sauté)
Take off Heat
2 Tablespoons of Fresh Shredded Mint
1 Teaspoon Lemon Peel
Dash of Salt and Pepper
Kale Chips with Onion Dip
8 Ounces Kale (Wash/Dried)
3 Tablespoons Olive Oil
1/2 Teaspoon Sea Salt
Toss oil and salt in a bowl with the kale
Bake kale in single layer baking sheet for 10 minutes at 300 degrees
Flip over and bake another 15-20 minutes until crisp
Take remaining oil from tossing kale and sauté 1 onion until golden brown on med heat
Stir Sautéed onions, 1/2 cup fat free yogurt, 1/2 cup sour cream, 1 teaspoon onion powder, 1/4 teaspoon black pepper, 3 tablespoons milk to make the dip.
