Low Carb St.Paddy's Day Shamrock Fried Eggs

  • 1 large green bell pepper

  • 4 large eggs

  • Cooking spray

  • Himalayan pink salt

  • Black pepper

  • Garlic powder

  • Hot sauce (if desired)

  1. Slice pepper into rings that are ¾ “ thick, creating 4 shamrock looking pepper rings

  2. Heat pay and spray with cooking spray

  3. Place the pepper rings into the pan, flipping after one minute

  4. Crack an egg into each ring and season with salt, pepper and garlic powder to taste

  5. Cover pan with lid and let the egg cook until the yolk is cooked to a desired level. It will take 3-5 minutes.
