Immune-Boosting Vegetable Soup for the Soul

Ingredients

· 2 carrots, diced

· 1 onion, diced

· 1 parsnip, diced

· 2 celery stalks, diced

· 1-inch ginger piece, peeled and grated

· 2 tsp turmeric powder

· 2 tsp coconut oil

· 5 cups purified water

· 1/4 tsp sea salt

· 1 lemon, juice only

· Freshly ground black pepper

· Fresh parsley leaves, to serve

Instructions

1. Add all the ingredients, except the lemon juice, to a soup pot, bring to boil over medium heat, then simmer over low heat for 30 minutes.

2. Season with salt and pepper, add the lemon juice and serve warm, garnished with fresh parsley leaves.
